<span style="font-family: Arial, Helvetica, sans-serif;">I spent most of this New Year's Day wrapping Christmas ornaments and other assorted decorations putting them in their appropriate containers and storing them away until next time, so I left New Year's dinner totally up to the Mister. </span><br />

<span style="font-family: Arial;">We had the obligatory collard greens. Ours was sautéed with a little bacon drippings and white wine. </span><br />

<span style="font-family: Arial;">This year he used <a href="http://gardenandgun.com/article/hoppin-new-year">THIS Hoppin' John recip</a>e from <em>Garden and Gun</em> magazine.</span><br />

<span style="font-family: Arial;">But the best thing ever was the pork tenderloin as seen above. </span><br />

<span style="font-family: Arial;">Very tender...and oh, so good your mama better watch out for that slap!</span><br />

<span style="font-family: Arial;">Take one pork tenderloin about 1 to 1 1/2 pounds and place in large zip-lock bag.</span><br />

<span style="font-family: Arial;">After four hours remove the pork and discard marinade. Grill the pork on low until it reaches 145 degrees internally. </span><br />

<span style="font-family: Arial, Helvetica, sans-serif;">Okay, so it's been a year since I added a new recipe. I've been a bit busy elsewhere including publishing a book during that time. I ran across this recipe, however, and had to try it as we eat a lot of zucchini. </span><br />

<span style="font-family: Arial;">We are already thinking of great ways to use it and pair it....with risotto, shredding the zucchini into long strands like spaghetti and add some pasta with it, too. </span><br />

<span style="font-family: Arial;">You might have some ideas. </span><br />
<span style="font-family: Arial;"></span><br />
<span style="font-family: Arial;">Tonight's pairing was with grilled chicken breast. </span><br />

<span style="font-family: Arial;">I doubt the leftovers will be around for long. It is THAT good!</span><br />

<span style="font-family: Arial;">4 T. butter</span><br />
<span style="font-family: Arial;">4 large zucchini, sliced</span><br />
<span style="font-family: Arial;">4 medium shallots, minced</span><br />
<span style="font-family: Arial;">1 cup heavy cream</span><br />
<span style="font-family: Arial;">2/3 cup cheddar cheese, shredded</span><br />
<span style="font-family: Arial;">1/3 cup parmesan cheese, grated</span><br />
<span style="font-family: Arial;">1/4 t. oregano</span><br />
<span style="font-family: Arial;">salt </span><br />
<span style="font-family: Arial;">pepper</span><br />
<span style="font-family: Arial;">green onions for garnish</span><br />

<span style="font-family: Arial;">Heat oven to 400 degrees. </span><br />

<span style="font-family: Arial;">Melt butter. Add shallots and garlic. Cook till translucent, a minute or two. </span><br />

<span style="font-family: Arial;">Add zucchini, cream, salt, pepper, oregano and parmesan cheese. </span><br />
<span style="font-family: Arial;"></span><br />
<span style="font-family: Arial;">Let mixture cook 8-10 minutes. Do not leave it alone. Stir it the entire time till mixture thickens and bubbly. </span><br />
<span style="font-family: Arial;"></span><br />
<span style="font-family: Arial;">Keep mixing while cooking. Add cheddar cheese, and mix till blended. </span><br />
<span style="font-family: Arial;"></span><br />
<span style="font-family: Arial;">Transfer mixture to greased 9x13 dish. Lightly sprinkle with more cheddar cheese. </span><br />
<span style="font-family: Arial;"></span><br />
<span style="font-family: Arial;">Bake 10-14 minutes till cheese is bubbly. </span><br />

<span style="font-family: Arial;">Top with green onions. </span><br />

taste. Add the cumin, coriander, and chili powder and continue to saute for 1
more minute to toast the spices. Stir in the chicken stock, and lime juice and
bring to a simmer. Add the beans and continue to simmer for 20 more minutes. <o:p></o:p></span></div>

<span style="font-family: Arial, Helvetica, sans-serif;">Everyone seems to have their own version for a Chicken Casserole and my mom and my mother-in-law were no different when I first married. Each wanted to know that I was using their recipe with some regularity. </span><br />

<span style="font-family: Arial, Helvetica, sans-serif;">It was a little stressful considering I wanted to put my own mark on the whole thing. After all......it was MY kitchen, right?</span><br />

<span style="font-family: Arial, Helvetica, sans-serif;">So....I combined the two recipes. Well, actually I combined the parts of both recipes that I liked, and this recipe has seen us through busy school days, nights at the ball field, and serves as a type of comfort food when we need it.</span><br />

<span style="font-family: Arial, Helvetica, sans-serif;">It's one of those things I make with NO recipe. I just know what it should look like. So.....I'll try......TRY to get it written down here.</span><br />
<span style="font-family: Arial, Helvetica, sans-serif;"><br /></span>
<span style="font-family: Arial, Helvetica, sans-serif;">First take one box (16 ounces) of linguine and cook it according to the package. I salt the water and add a little olive oil. I sample the noodles while they cook to make sure I don't get them too done......I generally take the pot off the stove once the noodles reaches the al dente stage. </span><br />
<span style="font-family: Arial, Helvetica, sans-serif;"><br /></span>
<span style="font-family: Arial, Helvetica, sans-serif;">Drain the noodles.</span><br />
<span style="font-family: Arial, Helvetica, sans-serif;"><br /></span>
<span style="font-family: Arial, Helvetica, sans-serif;">In the meantime chop one medium size onion. Throw it in a bowl with 2 cans of Cream of Chicken Soup. </span><br />

<span style="font-family: Arial, Helvetica, sans-serif;">Mix in one 8 ounce container Sour Cream, salt and pepper to taste, a small package of slivered almonds.</span><br />

<span style="font-family: Arial, Helvetica, sans-serif;">Add in 2-3 cups of diced, cooked chicken. I generally buy 2 packages of the diced, cooked chicken at the grocery store to save myself a step. I stick to breast meat.....</span><br />

<span style="font-family: Arial, Helvetica, sans-serif;">Mix everything well. </span><br />
<span style="font-family: Arial, Helvetica, sans-serif;"><br /></span>
<span style="font-family: Arial, Helvetica, sans-serif;">Add the noodles and mix again very well to coat the noodles. </span><br />

<span style="font-family: Arial, Helvetica, sans-serif;">Pour the noodle/chicken mixture into a glass 13 x 9 baking dish. </span><br />

<span style="font-family: Arial, Helvetica, sans-serif;">Melt 1 stick butter in a 4-cup glass container. Once melted mix in 2 cups Pepperidge Farm Stuffing Mix. Coat the dried breadcrumbs with the butter.</span><br />

<span style="font-family: Arial, Helvetica, sans-serif;">Spoon the breadcrumbs over the casserole.</span><br />

<span style="font-family: Arial, Helvetica, sans-serif;">Bake at 350 degrees for 15-20 minutes or until bubbly around the edges. </span><br />

and loft condos are in the mix as well.</span></div>

restaurant is housed in a reclaimed Atlanta manufacturing company. The building used to be the home of Southern
Elevator Company as far back as the 1920s.
A blurb on the Six Feet Under menu states, “According to local old-timers
the factory produced everything except those ‘really fancy cabs’. A former controller at the factory enjoys
‘sitting in his old office’ now that [the restaurant has moved in.]” </span><br />

Fried Shrimp basket and the one word I could use to describe my meal would
be……LIGHT. Yes, it was fried, but I
didn’t leave the restaurant feeling like I had just ingested a greasy
meal. The basket came with several
shrimp, homemade chips, and two hushpuppies which were unique. They seemed to be a mix of flour and
cornmeal….with the end result being more like a cake than the normal
hushpuppy. While I didn’t rave over
them…..it was a nice change, and I try to be open to new ways of preparing
food. The menu stated the hush puppies
as well as the tartar sauce were prepared with chopped jalapeno, but they
weren’t hot at all.<o:p></o:p></span></span></div>

I had things in the freezer I needed to use, so I rummaged around and found a pork loin roast. Well, actually it was half of a rather large one I had picked up from the grocery store when they had them on sale. </span></div><div class="MsoNoSpacing"><br />
</div><div class="MsoNoSpacing"><span style="font-family: Arial, Helvetica, sans-serif;">I had seen a particular recipe in Simple magazine earlier in the day and it called for broccoli slaw….and I happened to have a package, and didn’t want to waste it. To make this recipe even more interesting to try it involves the crock pot…..I was rather busy, and anytime I can work straight through and STILL have something cooked for dinner I jump on the opportunity.</span></div><div class="MsoNoSpacing"><br />
</div><div class="MsoNoSpacing"><span style="font-family: Arial, Helvetica, sans-serif;">1 medium red onion, sliced</span></div><div class="MsoNoSpacing"><span style="font-family: Arial, Helvetica, sans-serif;">8 T. cider vinegar</span></div><div class="MsoNoSpacing"><span style="font-family: Arial, Helvetica, sans-serif;">Kosher salt and black pepper</span></div><div class="MsoNoSpacing"><span style="font-family: Arial, Helvetica, sans-serif;">¼ cup sour cream</span></div><div class="MsoNoSpacing"><span style="font-family: Arial, Helvetica, sans-serif;">¼ cup mayonnaise</span></div><div class="MsoNoSpacing"><span style="font-family: Arial, Helvetica, sans-serif;">1 12-ounce package broccoli slaw (4 cups)</span></div><div class="MsoNoSpacing"><span style="font-family: Arial, Helvetica, sans-serif;">1 medium yellow onion, chopped</span></div><div class="MsoNoSpacing"><span style="font-family: Arial, Helvetica, sans-serif;">¼ cup tomato paste (1 small can)</span></div><div class="MsoNoSpacing"><span style="font-family: Arial, Helvetica, sans-serif;">¼ cup packed light brown sugar</span></div><div class="MsoNoSpacing"><span style="font-family: Arial, Helvetica, sans-serif;">1 T. Cover and refrigerate for at least 4 hours and up to 3 days.</span></div><div class="MsoNoSpacing"><br />
</div><div class="MsoNoSpacing"><span style="font-family: Arial, Helvetica, sans-serif;">In a large bowl, whisk together the sour cream, mayonnaise, 2 tablespoons of the remaining vinegar, and ¼ teaspoon each salt and pepper. Fold in the broccoli slaw and refrigerate for up to 12 hours.</span></div><div class="MsoNoSpacing"><br />

Using two forks, shred the pork and mix it into the cooking liquid.
